Ingredients

  • 3 cups chickpeas boiled
  • 3 peeled tomatoes diced
  • 1 onion sliced into half moon shapes
  • 2 cloves garlic finely diced
  • 1 long green pepper chopped
  • 1 red pepper chopped
  • 1 tsp chili powder
  • 1 tsp paprika powder
  • 1 tsp cumin
  • 1 tbsp tomato paste
  • 3 tbsp olive oil
  • 1 tsp salt or to taste
  • 1/2 tsp pepper cracked

For garnish and to serve:

  • 1 handful parsley chopped
  • bread

Instructions

  • To prepare the roasted vegetable dish, chop up all the vegetables and combine them in a shallow pan with chickpeas, spices, garlic, tomato paste, and olive oil.
  • Mix the ingredients well, then cover the pan with a moist paper and roast in a preheated oven at 395°F / 200°C for 30-40 minutes.
  • Make sure to mix the ingredients twice and keep the paper moist throughout the cooking process.
  • Serve with fresh parsley and bread. Enjoy!
