Caramelized Onion Toast

This caramelized onion toast is for all the onion lovers out there! The toasted sourdough is topped with vegan Feta, crushed walnuts, dill, and a drizzle of olive oil. This must-try brunch dish is easy to make; it just requires a little patience until the onions are fully caramelized. There is no need to add any sugar or sweetener to the onions; they will release their natural juices and caramelize on their own after a little while.

Ingredients

  • 2 slices of sourdough bread
  • 2 red onions
  • 1/4 cup Feta cheese plant-based from Violife to make it vegan
  • 1/4 cup fresh dill leaves
  • 2 tbsp crushed walnuts
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp cracked pepper

Instructions

  • Peel and thinly slice the onions. If you have a mandoline, I recommend using it. Heat olive oil in a pan over medium-high heat. Add onions to the pan and immediately add salt so that they begin to release their liquids.
  • Cook at a medium-low temperature for around 30 minutes or longer. Stir every few minutes until they become very dark (not burt!) and start to get sticky.
  • Once done, remove it from the pan. In the same pan, heat more olive oil and toast your sourdough directly in the pan. Spread the toast with the caramelized onions, top with crumbled (vegan) Feta cheese, dill, walnuts, cracked pepper, and drizzle with olive oil. Enjoy!
