Pesto Tofu Sandwich

- 4 slices sourdough bread toasted, or your favorite bread
- 1 Heirloom tomato sliced, or large tomato
- 1 head garlic
- For the pesto-crusted tofu:
- 6 (180) oz (g) firm tofu
- 1/4 cup Basil pesto vegan
- For the marinated onions:
- 1/2 red onion
- 1 lemon juiced
- 1/4 tsp salt
- For garnish:
- 1/2 cup basil
- 2 tbsp balsamic glaze
- 1/3 cup vegan cheese grated
- pinch coarse sea salt
- pinch cracked pepper
Begin by marinating the onion in salt and lemon juice. This can be done a day ahead for a more intense pink color.
Remove the tip of the garlic head and drizzle with olive oil.
Slice the tofu into thin slices and pat dry with a kitchen towel (or tofu press) to remove excess moisture. Coat each slice with pesto. Then, bake the tofu slices together with the garlic for about 25 minutes at 395 degrees F / 200 C.
Next, build your sandwich by spreading the squeezed garlic onto the toasted bread. Add heirloom tomatoes, pesto-crusted tofu, and cheese. Put it back into the oven until the cheese has melted. Garnish with basil, red onion, and balsamic glaze. Place the second piece of bread on top. Sprinkle with cracked pepper and coarse sea salt. Enjoy!
