WINTER GLOW SALAD

- 50 g also in oz arugula leaves
- 1/2 red onion finely chopped
- 1/2 pomegranate juiced
- 2 tbsp olive oil
- 1 cup red cabbage finely chopped
- 1 carrot grated
- 3 mini cucumbers chopped (or 1/2 cucumber)
- 1 pomegranate
- 1 tbsp grated ginger
- 1 stalk green onion finely diced, greed part only
- salt pepper to taste
For serving:
- 1/2 cup 50 g / 1.8 oz pecans, crushed
Add the chopped red onion to a bowl and marinate it with grapefruit juice and a pinch of salt for a few minutes to soften the flavor.
Prepare the rest of the ingredients while the onion marinates.
Add arugula, red cabbage, grated carrot, cucumber, green onion, and pomegranate seeds to the bowl.
Add grated ginger, olive oil, pepper, and more salt if needed.
Toss everything gently until well mixed.
Serve topped with crushed pecans for an extra crunch. Enjoy!
