HERBED CREAM & AVOCADO TOAST
Add some extra flavor and protein to your avocado toast with this creamy plant-based herbed tofu spread. It’s whipped up in no time and a great way to change up this delicious classic. I added cilantro to mine, you can also use other herbs, such as parsley or dill.

For the herbed tofu "cheese":
- 200 g / 7oz tofu I used medium firm
- 1 handful cilantro leaves or herbs of choice
- 1 tbsp olive oil
- 1 tbsp soy milk depending on the tofu you can start with less and adjust until you reach your desired consistency
- 1 tbsp nutritional yeast
- salt pepper to taste
Crumble the tofu. In a small food processor add the tofu with herbs, salt, pepper, nutritional yeast, and soy milk, and process.
Scrape down the sides once or twice if necessary. Stream in olive oil as needed to reach a creamy, but firm consistency.
To make the avocado toast, toast your favorite bread (I used sourdough).
Generously spread it with the creamy tofu.
Add sliced avocado and garnish with roasted cherry tomatoes (I put mine for a few minutes into the air-fryer with a bit of salt and olive oil) and cilantro leaves.
Optionally sprinkle with black salt and drizzle with olive oil. Enjoy!
