GARLIC CHIVE SPREAD
This vegan garlic chive cream cheese spread is creamy, garlicky, and full of flavor. The slow-cooked garlic confit is a game changer. It turns the garlic buttery soft and very mild. It’s the kind of spread you’ll want to keep in your fridge to level up any piece of toasted bread. It also works great as a dip or sandwich filling — simple ingredients and big flavor.

- 3 heads of garlic
- enough olive oil to cover the garlic in a small pot
- 150 g 5.3 oz vegan cream cheese (Violife works great)
- ½ cup chopped chives
- salt and pepper to taste
- chili flakes optional
Peel the garlic and place it in a small pot. Pour in enough olive oil to completely cover the cloves.
Cook over very low heat for about 35 minutes, until the garlic is soft and golden with only small bubbles forming. Strain and keep the garlic infused oil for other dishes.
Transfer the garlic confit to a bowl. Add vegan cream cheese, chopped chives, salt, pepper, and chili flakes if you like some heat.
Mash everything together until smooth and creamy, leaving a bit of texture if you prefer.
Spread generously on toasted bread, bagels, or crackers, or use it as a flavorful dip for veggies. Enjoy!
