CRISPY POTATO BALLS

- 4 potatoes 800 g / 1.76 lbs
- 4 tbsp corn starch adjust as needed
- salt to taste
- 1 tsp paprika powder
- chili flakes for garnish optional
- chopped parsley for garnish optional
- oil for frying
- Ketchup mayo, or hot sauce for serving
Peel and chop the potatoes. Boil them in salted water until soft and easily pierced with a knife.
Drain the potatoes and mash them using a ricer or fine mesh strainer for a smooth texture.
Mix the mashed potatoes with corn starch, paprika powder, and pepper. Form the mixture into balls. If the mixture is still sticky, add more corn starch until it holds together.
Heat oil in a frying pan and fry the potato balls until golden and crispy on all sides. Place the fried potato balls on a paper towel to remove excess oil.
Season with salt and optionally sprinkle with chili flakes and chopped parsley.
Serve hot with ketchup, mayo, or hot sauce. Enjoy!
