CRISPY BEANS ON TOAST
This is a simple, flavorful plant-based toast that combines creamy roasted garlic, sweet roasted cherry tomatoes, and golden crispy butter beans. The crispy beans add a satisfying crunch, while the garlic and tomatoes give depth and sweetness. It’s perfect for breakfast, brunch, or a light lunch.

- 2 cup cherry tomatoes
- 1 head of garlic top chopped off to expose cloves
- 2 tablespoons olive oil plus extra for drizzling
- salt and pepper to taste
- 200 g 7oz butter beans, drained and rinsed
- 1 teaspoon cornstarch
- 1/2 tsp paprika powder
- 2 slices of bread toasted
- fresh basil leaves for topping
- coarse salt for finishing
Place the cherry tomatoes and the garlic head on a small baking tray. Drizzle with olive oil, season with salt and pepper, and roast in the oven or air fryer at 400°F (200°C) for 30-35 minutes, until the tomatoes are soft and the garlic is caramelized.
While the tomatoes and garlic roast, pat the butter beans completely dry with a paper towel.
Transfer them to a separate baking tray and toss with cornstarch, paprika, salt, and pepper until evenly coated.
Roast the beans, turning occasionally, until golden and crispy on all sides, about 8–10 minutes. This can be done in a pan on the stove-top as well.
Once the tomatoes and garlic are done, let them cool slightly. Squeeze the softened garlic out of its skin and spread it generously over the toasted bread slices.
Arrange the roasted cherry tomatoes on top, then scatter the crispy butter beans over the tomatoes. Finish with a sprinkle of coarse salt, a drizzle of olive oil, and fresh basil leaves for garnish.
Serve immediately and enjoy!
