Ingredients

  • 220 g / 8 oz farfalle pasta or pasta of choice
  • 200 ml / 7oz soy cream or preferred cooking cream
  • 2 large onions thinly sliced
  • 1 head garlic tip chopped off
  • 2-3 tbsp olive oil
  • 1/2 bunch fresh parsley finely chopped
  • salt & pepper to taste
  • chili flakes optional
  • fresh basil leaves optional for garnish

Instructions

  • Peel and thinly slice the onion. Place them in an ovenproof dish and sprinkle with salt.
  • Drizzle with olive oil and toss to coat evenly. Add about 1/4 cup of water to prevent the onions from sticking.
  • Add the garlic head, cut side up, and drizzle with a little more olive oil.
  • Roast in the oven at 350°F (175°C) for about 1 hour, until the onions are golden and caramelized. Check occasionally and stir well.
  • Remove the garlic once it’s soft, after around 40 minutes. Add a little more water if needed. There is no need to add sugar or sweetener—the onions will release their natural juices and caramelize naturally.
  • Meanwhile, cook your pasta until al dente.
  • Once the onions are ready, remove the baking dish from the oven.
  • Add the soy cream, chili flakes (optional), and the chopped parsley. Mix well.
  • Add the pasta and toss to coat evenly with the creamy caramelized onions.
  • Garnish with fresh basil and cracked black pepper. Serve and enjoy!
