- 3 cups cooked white beans
- 1 large beet boiled or roasted, chopped into cubes
- juice of 1 lemon
- 1/4 cup tahini
- 1 tsp cumin powder
- 1 clove garlic optional
- ice water as needed
- 1/2 tsp salt or to taste
For garnish:
- 1 tbsp parsley
- 1 tsp sesame seeds
- 1/2 tsp chili flakes
- drizzle of extra virgin olive oil
In a food processor, combine the beans, beets, tahini, lemon juice, and spices. Add ice water little by little, depending on the thickness of your tahini. Process until smooth.
Finally, garnish with your choice of spices, seeds, and herbs.
