- 2 slices sourdough bread toasted
- 1 avocado
- 5 oz / 140 g brown mushrooms cleaned and thinly sliced
- 1 clove garlic finely diced
- 1 tbsp olive oil more for drizzling
- 1/2 cup parsley chopped
- 1 lemon organic, zest, and juice
- pinch salt
- cracked pepper
- 1/2 tsp chili flakes or to taste
- 2 tsp mixed seeds sesame, anise, and caraway
Clean and thinly slice the mushrooms. Heat olive oil over medium-high heat and roast them with garlic until they are tender. Sprinkle the parsley over the mushrooms. Add half of the lemon juice and salt and pepper to taste.
Mash the avocado with lemon juice and seasoning. Spread half of the mashed avocado on each slice of toasted sourdough bread.
Place the mushrooms on top of the mashed avocado. Finally, add lemon zest, drizzle some olive oil over the top, and sprinkle some seeds for a crunchy topping.
