Acuka - Turkish Style Breakfast Spread
Acuka is a traditional Turkish bread spread that is a staple in many Turkish households and is often served as a breakfast or snack item. It is made with a blend of walnuts, bread crumbs, and red pepper paste and can be used as a spread for toast or as a dip for appetizers. It happens to be fully plant-based too!

- 3 tbsp tomato paste
- 3 tbsp red pepper paste
- 2 cloves garlic roughly chopped
- 1.5 cups white bread cubed
- 1 cup walnuts
- 1 tsp cumin
- 1/2 tsp thyme
- 1/2 tsp salt or to taste
- 1/2 tsp pepper or to taste
- 1/4 tsp chili or to taste
- 1/2 cup olive oil
For garnish:
- 1/4 cup crushed walnuts
- 1/2 tbsp thyme
- 1 tsp olive oil
Start by crumbling the white bread into small pieces and adding them to a food processor along with the walnuts. Pulse the mixture until it becomes a fine powder. Then, add the garlic, tomato paste, red pepper paste, cumin, thyme, salt, pepper, and chili.
Gradually stream in the olive oil while continuing to pulse the mixture until it becomes a smooth paste.
Once the Acuka is ready, garnish it with crushed walnuts, thyme leaves, and a drizzle of olive oil. You can serve it immediately with toast or crackers, or store it in the refrigerator for up to a week.
