WINTER GLOW SALAD

Ingredients
- 50 g also in oz arugula leaves
- 1/2 red onion finely chopped
- 1/2 pomegranate juiced
- 2 tbsp olive oil
- 1 cup red cabbage finely chopped
- 1 carrot grated
- 3 mini cucumbers chopped (or 1/2 cucumber)
- 1 pomegranate
- 1 tbsp grated ginger
- 1 stalk green onion finely diced, greed part only
- salt pepper to taste
For serving:
- 1/2 cup 50 g / 1.8 oz pecans, crushed
Instructions
- Add the chopped red onion to a bowl and marinate it with grapefruit juice and a pinch of salt for a few minutes to soften the flavor.
- Prepare the rest of the ingredients while the onion marinates.
- Add arugula, red cabbage, grated carrot, cucumber, green onion, and pomegranate seeds to the bowl.
- Add grated ginger, olive oil, pepper, and more salt if needed.
- Toss everything gently until well mixed.
- Serve topped with crushed pecans for an extra crunch. Enjoy!
