Ingredients

  • 50 g also in oz arugula leaves
  • 1/2 red onion finely chopped
  • 1/2 pomegranate juiced
  • 2 tbsp olive oil
  • 1 cup red cabbage finely chopped
  • 1 carrot grated
  • 3 mini cucumbers chopped (or 1/2 cucumber)
  • 1 pomegranate
  • 1 tbsp grated ginger
  • 1 stalk green onion finely diced, greed part only
  • salt pepper to taste

For serving:

  • 1/2 cup 50 g / 1.8 oz pecans, crushed

Instructions

  • Add the chopped red onion to a bowl and marinate it with grapefruit juice and a pinch of salt for a few minutes to soften the flavor.
  • Prepare the rest of the ingredients while the onion marinates.
  • Add arugula, red cabbage, grated carrot, cucumber, green onion, and pomegranate seeds to the bowl.
  • Add grated ginger, olive oil, pepper, and more salt if needed.
  • Toss everything gently until well mixed.
  • Serve topped with crushed pecans for an extra crunch. Enjoy!
