Ingredients

  • 3 cups cooked white beans
  • 1 large beet boiled or roasted, chopped into cubes
  • juice of 1 lemon
  • 1/4 cup tahini
  • 1 tsp cumin powder
  • 1 clove garlic optional
  • ice water as needed
  • 1/2 tsp salt or to taste

For garnish:

  • 1 tbsp parsley
  • 1 tsp sesame seeds
  • 1/2 tsp chili flakes
  • drizzle of extra virgin olive oil

Instructions

  • In a food processor, combine the beans, beets, tahini, lemon juice, and spices. Add ice water little by little, depending on the thickness of your tahini. Process until smooth.
  • Finally, garnish with your choice of spices, seeds, and herbs.
