Ingredients
- 3 cups cooked white beans
- 1 large beet boiled or roasted, chopped into cubes
- juice of 1 lemon
- 1/4 cup tahini
- 1 tsp cumin powder
- 1 clove garlic optional
- ice water as needed
- 1/2 tsp salt or to taste
For garnish:
- 1 tbsp parsley
- 1 tsp sesame seeds
- 1/2 tsp chili flakes
- drizzle of extra virgin olive oil
Instructions
- In a food processor, combine the beans, beets, tahini, lemon juice, and spices. Add ice water little by little, depending on the thickness of your tahini. Process until smooth.
- Finally, garnish with your choice of spices, seeds, and herbs.
