HERBED CREAM & AVOCADO TOAST
Add some extra flavor and protein to your avocado toast with this creamy plant-based herbed tofu spread. It’s whipped up in no time and a great way to change up this delicious classic. I added cilantro to mine, you can also use other herbs, such as parsley or dill.
Ingredients
For the herbed tofu "cheese":
- 200 g / 7oz tofu I used medium firm
- 1 handful cilantro leaves or herbs of choice
- 1 tbsp olive oil
- 1 tbsp soy milk depending on the tofu you can start with less and adjust until you reach your desired consistency
- 1 tbsp nutritional yeast
- salt pepper to taste
Instructions
- Crumble the tofu. In a small food processor add the tofu with herbs, salt, pepper, nutritional yeast, and soy milk, and process.
- Scrape down the sides once or twice if necessary. Stream in olive oil as needed to reach a creamy, but firm consistency.
- To make the avocado toast, toast your favorite bread (I used sourdough).
- Generously spread it with the creamy tofu.
- Add sliced avocado and garnish with roasted cherry tomatoes (I put mine for a few minutes into the air-fryer with a bit of salt and olive oil) and cilantro leaves.
- Optionally sprinkle with black salt and drizzle with olive oil. Enjoy!
