CARAMELIZED ONION PASTA
This creamy caramelized onion pasta is a simple yet flavorful comfort dish. Sweet, roasted onions and soft garlic are combined with soy cream, a hint of chili flakes, and fresh herbs go perfectly with your favorite pasta. No sugar or sweeteners are needed—the onions caramelize naturally, bringing out their rich, savory flavor.

Ingredients
- 220 g / 8 oz farfalle pasta or pasta of choice
- 200 ml / 7oz soy cream or preferred cooking cream
- 2 large onions thinly sliced
- 1 head garlic tip chopped off
- 2-3 tbsp olive oil
- 1/2 bunch fresh parsley finely chopped
- salt & pepper to taste
- chili flakes optional
- fresh basil leaves optional for garnish
Instructions
- Peel and thinly slice the onion. Place them in an ovenproof dish and sprinkle with salt.
- Drizzle with olive oil and toss to coat evenly. Add about 1/4 cup of water to prevent the onions from sticking.
- Add the garlic head, cut side up, and drizzle with a little more olive oil.
- Roast in the oven at 350°F (175°C) for about 1 hour, until the onions are golden and caramelized. Check occasionally and stir well.
- Remove the garlic once it’s soft, after around 40 minutes. Add a little more water if needed. There is no need to add sugar or sweetener—the onions will release their natural juices and caramelize naturally.
- Meanwhile, cook your pasta until al dente.
- Once the onions are ready, remove the baking dish from the oven.
- Add the soy cream, chili flakes (optional), and the chopped parsley. Mix well.
- Add the pasta and toss to coat evenly with the creamy caramelized onions.
- Garnish with fresh basil and cracked black pepper. Serve and enjoy!
