Ingredients

  • 2 cup cherry tomatoes
  • 1 head of garlic top chopped off to expose cloves
  • 2 tablespoons olive oil plus extra for drizzling
  • salt and pepper to taste
  • 200 g 7oz butter beans, drained and rinsed
  • 1 teaspoon cornstarch
  • 1/2 tsp paprika powder
  • 2 slices of bread toasted
  • fresh basil leaves for topping
  • coarse salt for finishing

Instructions

  • Place the cherry tomatoes and the garlic head on a small baking tray. Drizzle with olive oil, season with salt and pepper, and roast in the oven or air fryer at 400°F (200°C) for 30-35 minutes, until the tomatoes are soft and the garlic is caramelized.
  • While the tomatoes and garlic roast, pat the butter beans completely dry with a paper towel.
  • Transfer them to a separate baking tray and toss with cornstarch, paprika, salt, and pepper until evenly coated.
  • Roast the beans, turning occasionally, until golden and crispy on all sides, about 8–10 minutes. This can be done in a pan on the stove-top as well.
  • Once the tomatoes and garlic are done, let them cool slightly. Squeeze the softened garlic out of its skin and spread it generously over the toasted bread slices.
  • Arrange the roasted cherry tomatoes on top, then scatter the crispy butter beans over the tomatoes. Finish with a sprinkle of coarse salt, a drizzle of olive oil, and fresh basil leaves for garnish.
  • Serve immediately and enjoy!
