CRISPY BEANS ON TOAST
This is a simple, flavorful plant-based toast that combines creamy roasted garlic, sweet roasted cherry tomatoes, and golden crispy butter beans. The crispy beans add a satisfying crunch, while the garlic and tomatoes give depth and sweetness. It’s perfect for breakfast, brunch, or a light lunch.

Ingredients
- 2 cup cherry tomatoes
- 1 head of garlic top chopped off to expose cloves
- 2 tablespoons olive oil plus extra for drizzling
- salt and pepper to taste
- 200 g 7oz butter beans, drained and rinsed
- 1 teaspoon cornstarch
- 1/2 tsp paprika powder
- 2 slices of bread toasted
- fresh basil leaves for topping
- coarse salt for finishing
Instructions
- Place the cherry tomatoes and the garlic head on a small baking tray. Drizzle with olive oil, season with salt and pepper, and roast in the oven or air fryer at 400°F (200°C) for 30-35 minutes, until the tomatoes are soft and the garlic is caramelized.
- While the tomatoes and garlic roast, pat the butter beans completely dry with a paper towel.
- Transfer them to a separate baking tray and toss with cornstarch, paprika, salt, and pepper until evenly coated.
- Roast the beans, turning occasionally, until golden and crispy on all sides, about 8–10 minutes. This can be done in a pan on the stove-top as well.
- Once the tomatoes and garlic are done, let them cool slightly. Squeeze the softened garlic out of its skin and spread it generously over the toasted bread slices.
- Arrange the roasted cherry tomatoes on top, then scatter the crispy butter beans over the tomatoes. Finish with a sprinkle of coarse salt, a drizzle of olive oil, and fresh basil leaves for garnish.
- Serve immediately and enjoy!
