Acuka - Turkish Style Breakfast Spread

Ingredients
- 3 tbsp tomato paste
- 3 tbsp red pepper paste
- 2 cloves garlic roughly chopped
- 1.5 cups white bread cubed
- 1 cup walnuts
- 1 tsp cumin
- 1/2 tsp thyme
- 1/2 tsp salt or to taste
- 1/2 tsp pepper or to taste
- 1/4 tsp chili or to taste
- 1/2 cup olive oil
For garnish:
- 1/4 cup crushed walnuts
- 1/2 tbsp thyme
- 1 tsp olive oil
Instructions
- Start by crumbling the white bread into small pieces and adding them to a food processor along with the walnuts. Pulse the mixture until it becomes a fine powder. Then, add the garlic, tomato paste, red pepper paste, cumin, thyme, salt, pepper, and chili.
- Gradually stream in the olive oil while continuing to pulse the mixture until it becomes a smooth paste.
- Once the Acuka is ready, garnish it with crushed walnuts, thyme leaves, and a drizzle of olive oil. You can serve it immediately with toast or crackers, or store it in the refrigerator for up to a week.
