Ingredients
- 2 slices sourdough bread toasted
- 1 avocado
- 5 oz / 140 g brown mushrooms cleaned and thinly sliced
- 1 clove garlic finely diced
- 1 tbsp olive oil more for drizzling
- 1/2 cup parsley chopped
- 1 lemon organic, zest, and juice
- pinch salt
- cracked pepper
- 1/2 tsp chili flakes or to taste
- 2 tsp mixed seeds sesame, anise, and caraway
Instructions
- Clean and thinly slice the mushrooms. Heat olive oil over medium-high heat and roast them with garlic until they are tender. Sprinkle the parsley over the mushrooms. Add half of the lemon juice and salt and pepper to taste.
- Mash the avocado with lemon juice and seasoning. Spread half of the mashed avocado on each slice of toasted sourdough bread.
- Place the mushrooms on top of the mashed avocado. Finally, add lemon zest, drizzle some olive oil over the top, and sprinkle some seeds for a crunchy topping.
