Ingredients

For the beetroot hummus:

  • 1 cup cooked chickpeas
  • 1 small cooked beetroot
  • 2 tbsp tahini choose a runny kind
  • 2 tbsp lemon juice
salt to taste
  • 2 –3 tbsp ice water to adjust consistency

For the guacamole:

  • 1 avocado
  • 1 tbsp lime juice
  • 1 small garlic clove optional
  • salt and pepper to taste

Other ingredients:

  • 1/3 cup plant-based cream cheese garnish with paprika powder, chopped parsley, and a drizzle of olive oil
  • 1/4 cup kalamata olives
  • 1/4 cup green olives
  • 1 carrot peeled and cut into sticks
  • 1/3 cucumber cut into sticks
6 radishes, halved
  • 1/2 cup cherry tomatoes
  • 1 cup small bell peppers
  • 1/2 pomegranate
  • 1/4 cup macadamia nuts
  • 1/4 cup pecan nuts
  • 1/4 cup roasted cashews
  • 1 cup crackers of choice or a mix of two varieties

Instructions

  • For the beetroot hummus add tahini, ice-water, lemon juice, and salt to a blender or food processor.
  • Blend until smooth. Add beetroot and blend again.
  • Now add chickpeas and more water if needed, and blend until creamy. Drizzle with olive oil.
  • For the guacamole mash the avocado in a bowl or blend for a smooth texture. Stir in lime juice, garlic, salt, and pepper. Adjust seasoning as desired.
  • To assemble the board, place the beetroot hummus, guacamole, and cream cheese in small bowls.
  • Arrange them on a large board or platter. Fill the remaining space with olives, chopped veggies, nuts, pomegranate seeds, and crackers.
  • Serve immediately and enjoy.
