Italian Sandwich (vegan)
This Italian-style sandwich is a vegan take with a twist on the classic Caprese sandwich. It’s made with vegan mozzarella-style cheese, heirloom tomatoes, and balsamic glaze. Instead of basil, this recipe asks for chives, which works really well too.

Ingredients
- 2 slices sourdough bread toasted, or your favorite bread
- 2 tbsp cream cheese plant-based to make it vegan
- 1/2 bunch chives finely chopped
- 4 slices of vegan Mozzarella-style cheese
- 1 heirloom tomato sliced
- 1 tbsp balsamic glaze
- 1 tbsp pickled red onion
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tablespoon olive oil
Instructions
- You'll need 2 slices of sourdough bread, which can be toasted in a toaster or a pan with some olive oil.
- Spread 2 tablespoons of plant-based cream cheese on one slice of bread. Finely chop the chives and lay them on a flat plate. Dip the bread into the chives so that as many as possible stick to it.
- Add the vegan mozzarella-style cheese and sliced heirloom tomato to the bread.
- Top with balsamic glaze, pickled red onions, season with salt and pepper, and a drizzle of olive oil. Place the second slice of bread on top and enjoy immediately.
