Feta stuffed Sweet Potato (vegan)

Ingredients
- 2 sweet potatoes
- 3.5 oz or 100g vegan feta cheese 1/2 block violife "Greek-style"
- 1/4 red onion thinly sliced
- juice of 1/2 lemon
- 1/4 teaspoon salt or to taste
- 1/4 tsp cracked pepper
- 1 tsp dried thyme
Instructions
- Start by washing the sweet potatoes and cutting them in half. Score them with a crosshatch pattern and brush with olive oil, then season with salt and roast in the oven at 395 degrees F (200 C) until they are soft.
- While the potatoes are cooking, massage the sliced red onion with salt and lemon juice, and let it sit until you're ready to serve.
- Once the potatoes are done, let them cool for a bit to avoid burning yourself. Cut the vegan feta cheese into squares and remove the same-sized squares from the potatoes. Replace them with the feta cheese and bake for another 5 minutes until the cheese is soft.
- Season the potatoes with thyme and cracked pepper, and then garnish with the red onions.
- Serve with a side of salad and enjoy.
