Ingredients
- 3 cups chickpeas boiled
- 3 peeled tomatoes diced
- 1 onion sliced into half moon shapes
- 2 cloves garlic finely diced
- 1 long green pepper chopped
- 1 red pepper chopped
- 1 tsp chili powder
- 1 tsp paprika powder
- 1 tsp cumin
- 1 tbsp tomato paste
- 3 tbsp olive oil
- 1 tsp salt or to taste
- 1/2 tsp pepper cracked
For garnish and to serve:
- 1 handful parsley chopped
- bread
Instructions
- To prepare the roasted vegetable dish, chop up all the vegetables and combine them in a shallow pan with chickpeas, spices, garlic, tomato paste, and olive oil.
- Mix the ingredients well, then cover the pan with a moist paper and roast in a preheated oven at 395°F / 200°C for 30-40 minutes.
- Make sure to mix the ingredients twice and keep the paper moist throughout the cooking process.
- Serve with fresh parsley and bread. Enjoy!
