SUSHI BOWL
This vegan sushi bowl is perfect when you are craving sushi but want something quick and easy. It combines sushi rice with pan-fried smoked tofu, fresh carrots, cucumber, avocado, and radishes. Toasted nori sheets are served on the side and used to scoop up little bites with rice, tofu, and veggies. Enjoy it with soy sauce and wasabi for a simple sushi-inspired meal at home.

Ingredients
For the Sushi Rice:
- 2 cups cooked sushi rice seasoned with rice vinegar
For the Vegetables:
- 1/2 cucumber thinly sliced
- 1 carrot peeled and julienned
- 4 radishes thinly sliced
- 1 avocado thinly sliced
For the Tofu:
- 6 oz 180 grams smoked tofu, sliced
- 1 tablespoon oil
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame oil
- 2 teaspoons sriracha
For Serving:
- Nori sheets cut into squares
- Spring onion greens
- Black sesame seeds
- Soy sauce
- Wasabi
Instructions
- Prepare the sushi rice according to package instructions if not already cooked and set aside to cool slightly.
- Heat oil in a pan over medium heat. Add the sliced smoked tofu and cook for 3-4 minutes, turning until lightly golden. Add soy sauce, sesame oil, and sriracha, toss to coat, and cook for another 1 to 2 minutes. Remove from heat.
- In a dry pan, lightly toast the nori squares for a few seconds on each side until crisp. Set aside.
- Divide the sushi rice between two bowls. Arrange tofu, cucumber, carrot, radishes, and avocado on top.
- Garnish with spring onion greens and black sesame seeds.
- Serve with toasted nori squares, soy sauce, and wasabi. Use the nori to scoop up small bites of rice, tofu, and vegetables. Enjoy.
