Raspberry stuffed Dates

Ingredients
- 6 Medjool dates
- 6 frozen raspberries
- 1/4 cup hazelnuts chopped
- 2.5 oz / 70 g vegan chocolate
Instructions
- Start by melting your chocolate in a water bath. Be sure to avoid melting the chocolate directly in a metal pot, as this can cause the chocolate to seize due to overheating.
- Next, slice your dates on one side lengthwise and remove the pit. Stuff each date with a frozen raspberry and close them up again. Dip the stuffed dates in the melted chocolate and sprinkle with crushed hazelnuts.
- Once you've coated all of your dates, place them in the freezer for a few minutes (if you're impatient) or in the fridge for about 15 minutes. Once the chocolate has hardened, they are ready to enjoy! Keep refrigerated.
