Ingredients
- 4 toasted slices of sourdough or your favorite bread
- 1 avocado sliced
- 2 tbsp dijon mustard
- 1/4 cup dill chopped (optional)
- 1 yellow bell pepper
- 1 red bell pepper
- 1 carrot
- 1/4 cup pickled red onion
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp olive oil
- 1 lemon juiced
Instructions
- Begin by roasting the bell peppers in the oven at 395 degrees F / 200 degrees C until the skin has blackened. Once cooled, remove the skin and chop it into strips. Marinate the slices in olive oil with salt and pepper. Peel and slice the carrot into thin strips with a peeler. Steam until soft, for about 1 minute.
- To assemble the sandwich, place sliced avocado on one slice of bread and spread Dijon mustard on the other. Mash the avocado and drizzle with lemon juice. Season with a pinch of salt and pepper. Add the steamed carrot, marinated bell peppers, pickled red onions, and dill. Fold together and enjoy!
