Ingredients

  • 1.8 oz / 50 g glass noodles soaked in hot water and rinsed
  • 1/2 cucumber cut into ribbons with a peeler
  • 1/2 carrot cut into ribbons with a peeler
  • 4 radishes halved
  • 3.5 oz / 100 g silken tofu sliced
  • 1/2 mango cubed
  • 1/2 avocado thinly sliced

For the dressing:

  • 1 tbsp tamari
  • 1/2 tbsp sesame oil
  • juice of 1/2 lime
  • 1 tbsp Thai-basil chili oil store-bought

For topping:

  • 1 fresh chili finely chopped (optional)
  • 1 tsp black sesame seeds
  • 1 tbsp crushed peanuts

Instructions

  • Prepare all your veggies and assemble them in a bowl.
  • Add all the dressing ingredients to a small jar. Shake until well combined. Ready to enjoy!
