Peanut Noodles
These peanut noodles are easily prepared in one bowl. Minimal clean-up guaranteed! All you have to do, is to prepare the dressing ingredients directly in your bowl and add cooked noodles. Add crispy toppings in the end and enjoy! This is my ideal vegan meal for weeknight dinners or when I don’t have lots of fresh produce at home.

Ingredients
- 160 g / 6oz Asian wheat noodles of choice
- 2 stalks spring onion finely chopped, use half for the sauce and half for garnish
- 2.5 cm / 1 inch ginger grated
- 1 clove garlic grated
- 1 tsp chili flakes or according to taste
- 1/4 cup peanut butter softened
- 2-3 tbsp soy sauce
- 1/4 cup neutral oil
For topping:
- 1/2 stalk spring onion
- 2 tbsp crispy fried onions
- 2 tbsp crushed peanuts
Instructions
- Prepare your noodles according to package instructions. Rinse and set aside. Drizzle them with toasted sesame oil to avoid them sticking together and for extra flavor.
- Directly in your serving bowl add spring onion, grated ginger, grated garlic, and chili flakes.
- Heat neutral oil and pour into the bowl to cook the veggies.
- Then add the soft peanut butter with soy sauce and tamari. Whisk until the sauce becomes smooth.
- Add the cooked noodles and toss well.
- Optionally add more spring onion, crispy fried onions (I highly recommend it!) and crushed peanuts. Enjoy!
