Ingredients
- 8 (220) oz (g) Linguine or pasta of choice
- 2 tbsp olive oil
- 2 cloves garlic minced
- 2 lemons juice and zest (organic if possible)
- 1 cup plant-based cream
- 1/4 cup vegan cheese
- 1/4 teaspoon red pepper flakes optional
- 1/2 tsp salt or to taste
- 1/2 tsp pepper or to taste
- 1/2 cup fresh parsley chopped (for garnish)
- 1 sliced lemon for garnish
Instructions
- Start by cooking your pasta of choice in salt water according to the package instructions. While the pasta is cooking, heat olive oil in a pan over medium heat. Add minced garlic and chili flakes (if using) and cook for 1 minute until fragrant.
- Then, add lemon juice, lemon zest, vegan cream and a pinch of salt and black pepper to the pan. Let the sauce cook for a few minutes until it thickens slightly.
- Once the pasta is cooked, drain it and add it to the pan with the lemon sauce. Toss the pasta in the sauce and add the cheese along with some of the pasta cooking water. Garnish with fresh parsley and cracked pepper and serve immediately.
