  • 8 (220) oz (g) Linguine or pasta of choice
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 2 lemons juice and zest (organic if possible)
  • 1 cup plant-based cream
  • 1/4 cup vegan cheese
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 tsp salt or to taste
  • 1/2 tsp pepper or to taste
  • 1/2 cup fresh parsley chopped (for garnish)
  • 1 sliced lemon for garnish

Instructions

  • Start by cooking your pasta of choice in salt water according to the package instructions. While the pasta is cooking, heat olive oil in a pan over medium heat. Add minced garlic and chili flakes (if using) and cook for 1 minute until fragrant.
  • Then, add lemon juice, lemon zest, vegan cream and a pinch of salt and black pepper to the pan. Let the sauce cook for a few minutes until it thickens slightly.
