Easy Green Pasta
Ingredients
- 8 oz / 220 g Spaghetti or pasta of choice
For the sauce:
- 1 cups spinach
- 1 cup cilantro
- 1 cup parsley
- 1 avocado
- 1 lime juiced
- 1 jalapeño pepper
- 1-2 cloves garlic
- 1/2 tsp salt or to taste
- 1/4 tsp cracked pepper or to taste
- 1 cup oat milk or other plant-based unsweetened milk / adapt as needed
- 1/3 cup cashew nuts boiled for 10 mins or soaked for 2 hours or more
For garnish:
- 1 tbsp olive oil
- 1/4 cup hemp seeds
Instructions
- Blend the sauce ingredients in a blender. Depending on the size of the avocado, you will need more or less of the plant-based milk. Adjust to your desired consistency.
