Ingredients
- 4 ripe tomatoes roughly chopped
- 1 small cucumber peeled
- 1 red bell pepper roughly chopped
- 1/4 red onion finely diced
- 1/4 baguette from the day before, roughly chopped
- 1 clove garlic finely diced
- 1/4 cup olive oil
- 2 tbsp sherry vinegar
- 1 tspsalt t or to taste
- 1/2 tsp pepper or to taste
For garnish:
- 2 tbsp olive oil
- 1/2 cup basil leaves chiffonade cut
- 1/2 green bell pepper finely diced into cubes
- 2 tbsp red onion finely diced into cubes
- 1/2 cup croutons
Instructions
- Begin by prepping all the veggies. Combine tomatoes, bell pepper, cucumber, red onion, garlic, and the bread chunks in a large bowl with salt, pepper, sherry vinegar, and olive oil.
- Firmly press down with a plate, add some weight to it, and let marinate for as long as possible (or overnight). Add all ingredients to a blender and blend for about a minute until you have reached a creamy consistency.
- Chill until you are ready to enjoy. Garnish with fresh basil, bell pepper, red onion, and croutons, and drizzle with olive oil.
