Crispy Tacos
Introducing the Taco Shell you never knew you needed. It's all the flavor of a traditional taco, with the bonus of a crunchy, satisfying shell. These tacos are so good, you may never want to go back to regular shells again! The tortillas are breaded in BBQ sauce and crushed tortilla chips, and then baked until crispy.

Ingredients
For the taco shells:
- 6 wheat tortillas small
- 1/2 cup BBQ sauce
- 4 oz tortilla chips
For the filling:
- 5 oz vegan ground “beef” or protein of choice
- 3 tsp taco seasoning
- 1 yellow bell pepper
- 1 green bell pepper
- 1 red bell pepper
- 1/2 tsp salt or to taste
- 1/2 tsp pepper or to taste
- 1 red onion
- 2 tbsp olive oil
For topping:
- 1/2 cup pickled red onion
- 1 cup Guacamole
- Hot sauce optional
Instructions
- Crush the tortilla chips and dip the tortillas in BBQ sauce, then coat them in the tortilla chips. Bake in the oven at 350 degrees F for 10 minutes until crispy.
- For the filling, sauté some vegan ground "beef" (or protein of your choice) with taco seasoning.
- For the fajita vegetables, thinly slice some red, green, and yellow bell peppers and red onion, and sauté them with salt and pepper until soft.
- Fill your crispy tacos with the (vegan) ground beef and fajita vegetables, and top with guacamole and pickled red onions. If you like it spicy, add some hot sauce for an extra kick.
