CHOPPED SALAD SANDWICH

This chopped chickpea salad sandwich is filling, healthy, delicious and completely plant-based! It’s made with chickpeas, tomato, cucumber, carrot, and red onion. Capers, aioli, chili sauce, and dijon mustard give it a nice kick! Budget-friendly and made in 10 minutes. Enjoy this healthy lunch option!

Ingredients

  • Bread of choice I used sourdough in this recipe
  • 3/4 cup chickpeas
  • 1 handful mixed lettuce leaves
  • 2 slices tomato
  • 6 slices cucumber
  • 1/2 carrot thinly shaved
  • 2-3 red onion rings
  • 1 tbsp capers
  • 1 tbsp dijon mustard
  • 1 tbsp aioli vegan
  • chili sauce as desired

Instructions

  • Simply place all ingredients onto a chopping board and finely chop until everything is mixed well.
  • Spread onto your favorite toasted bread and enjoy!
