Ingredients
- 1 medium-sized beet boiled & peeled, chopped
- 1 cup walnuts
- 1 clove garlic finely diced or more
- 1/2 cup cilantro
- 1/2 cup parsley
- 1 tbsp vinegar
- 1 tsp cumin
- 1/2 tsp chili
- 1/2 salt or to taste
- 1/4 tsp pepper freshly cracked
Instructions
- Begin by cooking or roasting fresh beets, or use pre-cooked beets from the store.
- Blend walnuts in a food processor for about 10 seconds. Then add herbs, garlic, vinegar, and spices. Process to combine. Add in the cooked beets and mix again.
- Form little balls. This works best with moist hands. If you feel like they are too wet, add a bit more of the walnut “flour".
- Garnish with walnuts and cilantro leaves.
- The result is a vibrant and flavorful spread, best enjoyed with the traditional lavash or other bread and crackers.
