BBQ Tofu Skewers
Tofu BBQ is a delicious vegetarian or vegan alternative to traditional BBQ meats. These easy-to-make grilled tofu skewers with summer veggies are perfect for a plant-based barbecue. For an apartment-friendly version, grill them in the oven with the grill function. Serve with extra smoky BBQ sauce and enjoy!

Ingredients
- 14 oz / 400 g extra firm tofu
- 2 green long peppers
- 8 brown mushrooms
- 1 cup cherry tomatoes
- 1 red onion
- 1/2 cup BBQ sauce store-bought, plant-based
- 2 tbsp olive oil
Instructions
- Preheat the grill to medium heat.
- Drain and press the tofu using a tofu press or a clean kitchen towel to remove excess water.
- Cut the tofu into equal sized cubes and pat dry with a paper towel. (Be sure they are big enough to be able to pierce them with your skewers.)
- In a small bowl, mix the BBQ sauce with 1 tbsp of olive oil. Marinate the tofu cubes in the BBQ sauce and let them sit for as long as possible. This can even be done the day ahead.
- Cut the bell peppers and onions into bite-sized pieces. Halve the mushrooms.
- Thread the tofu, bell peppers, mushrooms, and onions onto the skewers, alternating the ingredients.
- Brush more BBQ sauce mixture onto the skewers, making sure to coat all the ingredients.
- Grill the skewers for 8–10 minutes, turning occasionally, until the veggies are tender and the tofu is slightly charred.
- Serve hot with more BBQ sauce and enjoy!
