Ingredients

  • 1/2 sheet nori
  • approx. 3/4 cup cooked and seasoned sushi rice cold
  • 1/4 cucumber cut into thin strips
  • 1/2 carrot cut into thin strips
  • A small piece of red cabbage cut into thin strips
  • A few slices of pink marinated onion
  • 1/4 to 1/2 avocado thinly sliced (depending on the size) I used 1/4 in this video
  • 2 tsp sesame seeds mix of black and white
  • For serving: soy sauce or tamari wasabi

Instructions

  • Place half a sheet of nori on a bamboo mat. Spread an even layer of rice on the nori.
  • Sprinkle sesame seeds over the rice.
  • Cover with plastic wrap and carefully flip it over so the rice is facing down.
  • Place cucumber, carrot, red cabbage, and pink onions across the center.
  • Roll tightly using the mat.
  • Arrange the thin avocado slices on a piece of plastic wrap.
  • Place the sushi roll on top of the avocado and wrap tightly with the plastic so the avocado sticks to the roll.
  • Slice with a sharp wet knife and serve with wasabi and soy sauce (or tamari to make it gluten free).

Notes

If you want to make these in advance, be sure to drizzle the avocado with lemon or lime juice to avoid browning. Also keep the rolls whole and wrapped in the fridge. Slice them before serving.
