ASIAN RICE NOODLE SALAD

This simple and refreshing Asian Rice Noodle Salad is made with protein-rich edamame, crunchy veggies, creamy avocado and a tangy ginger dressing. It's the ideal healthy lunch.

Ingredients

  • 1.5 cups cooked rice noodles
  • 1 heaping cup grated carrot
  • 1 heaping cup red cabbage
  • 3/4 cup edamame
  • 1/2 avocado diced into slices or cubes
  • 1 stalk spring onion finely chopped
  • 2 tbsp cilantro leaves
  • 1 red chili pepper optional
  • black sesame seeds for topping or Furikake from Trader Joes

For the dressing:

  • 1 tbsp toasted sesame oil
  • 2 tbsp soy sauce or tamari
  • 1 tbsp lemon or lime juice
  • 1 inch / 2.5 cm grated ginger
  • 1 tsp agave

Instructions

  • In a large bowl add rice noodles, carrots, red cabbage, edamame, and the herbs.
  • Top with the avocado and sprinkle with black sesame or any other topping you like. Peanuts or cashews work really well here too. For the dressing add all ingredients to a small jar.
  • Shake well and toss with the salad. Enjoy!
