Easy Green Pasta

Make a quick and scrumptious pasta sauce by blending spinach, herbs, and avocado with spices. No cooking or chopping is required! You can substitute other greens and herbs you have on hand. The recipe also includes cashews for added protein, extra creaminess, and to make the color even brighter. Enjoy this creamy, healthy, and tasty pasta sauce.

Ingredients

  • 8 oz / 220 g Spaghetti or pasta of choice

For the sauce:

  • 1 cups spinach
  • 1 cup cilantro
  • 1 cup parsley
  • 1 avocado
  • 1 lime juiced
  • 1 jalapeño pepper
  • 1-2 cloves garlic
  • 1/2 tsp salt or to taste
  • 1/4 tsp cracked pepper or to taste
  • 1 cup oat milk or other plant-based unsweetened milk / adapt as needed
  • 1/3 cup cashew nuts boiled for 10 mins or soaked for 2 hours or more

For garnish:

  • 1 tbsp olive oil
  • 1/4 cup hemp seeds

Instructions

  • Blend the sauce ingredients in a blender. Depending on the size of the avocado, you will need more or less of the plant-based milk. Adjust to your desired consistency.
  • Cook pasta al dente and reserve some of the salted cooking water.
  • Gently heat sauce in a pan and toss pasta in it.
  • Add cooking water as needed. Enjoy!
