Ingredients

  • 2 brioche buns dairy-free for a vegan meal
  • 1 cauliflower small
  • 3 tbsp olive oil
  • 3 tbsp BBQ sauce store-bought

For garnish:

  • 3 tbsp Aioli vegan
  • 1/4 cup pickled red onion
  • 1/4 cup pickled red cabbage
  • 2 tbsp pickled jalapeƱos
  • 1 cup mixed lettuce
  • 1 tomato sliced

Instructions

  • To make the cauliflower steak, start by removing the outer leaves from a head of cauliflower and slicing it into 1-inch-thick (2,5cm) "steaks". Then, mix together olive oil and BBQ sauce and brush the cauliflower steaks with the marinade. Let the cauliflower sit for at least 10 minutes to absorb the flavors of the marinade.
  • Next, heat a pan or grill and cook the cauliflower steaks for about 5-7 minutes per side, or until they are tender and slightly charred. Brush the steaks with more of the marinade during the last few minutes of cooking to give them an extra burst of flavor.
  • To assemble the burger, toast the brioche buns in a pan with a bit of oil. Spread with aioli and add lettuce, the cauliflower steak, more BBQ sauce, tomato, and pickles. Enjoy immediately!
